I haven't played a ton of Kirby games, but one I have played is Super Star Ultra on the DS. The game consists of a half dozen different little games, each using the classic Kirby gameplay in different ways. There's no real challenge in the main gameplay, but that's never been the point of Kirby. Kirby is, in a word, comfortable.

The game plays great, looks nice, and is just pure fun. The different abilities are all satisfying to use, and each of the 6 games is fun in their own way.

I think everyone should play at least one Kirby game. I can't recommend they play ALL of them, since they do play largely the same, but if you're just going to play one, Super Star Ultra is a great choice. I actually finished this one in one sitting.
